How to Assess Fresh-Truffle Quality
What to ask about species and storage, and how to read descriptions of firmness, appearance and aroma together.

When reading a listing or speaking to the seller, ask for the species and known storage history. Then consider firmness, appearance and aroma together. These are useful observations about a specimen or batch, but the seller’s description is not an independent quality assessment.
A strong smell is not enough: storage and heat change aroma. Assessing present condition does not automatically confirm species or origin, and days since purchase cannot replace information about initial condition and storage.
