A judgement without a measurement protocol remains expert assessment. A merchant’s description of firmness, aroma or appearance is a reported observation about a consignment, not an independent laboratory grade.
Storage and heat change the aroma profile, so scent at inspection answers a question about condition at that moment — not about species or exact origin.
