Truffle Aroma: What We Know
Why truffles smell different, and what aroma can tell us about species, maturity, storage and added flavouring.
02Explanation
Aroma comes from a mixture of compounds released into the air. Their balance varies with species, maturity, environment and storage. A recognizable or strong smell alone therefore does not establish species, quality or harvest origin.
For processed products, distinguish aroma from the ingredient list. “Natural flavouring” does not necessarily mean flavouring obtained from truffles; “natural truffle flavouring” has specific conditions. The presence of truffle as an ingredient and its declared percentage are separate label questions.
