Truffle Glossary

Canonical terms with short definitions, meaning boundaries and sources.

The terms connect to the species, methods, labels and statuses used in the project’s records.

Each definition also states what the term does not mean, so it is not confused with a related expression.

  1. Tuber (genus)

    A genus of ascomycete fungi that form underground fruiting bodies and live in ectomycorrhizal association with trees.

    Does not mean “Tuber” is not the name of one species, nor of every fungus that grows underground.

  2. hypogeous fruiting body

    The reproductive structure of Tuber species that matures below ground and disperses spores.

    Does not mean A fruiting body is not a root, not a seed and not the whole fungus.

  3. ectomycorrhiza

    The association between a fungus and host-tree roots on which truffle development depends.

    Does not mean Mycorrhiza is not a fertiliser or a guarantee of fruiting; the association alone promises no fruiting bodies.

  4. ascocarp

    The spore-producing fruiting body of ascomycete fungi; in truffles it forms below ground.

    Does not mean The word describes a type of fruiting body, not a separate truffle species.

  5. mycelium

    The fungal network growing through soil and roots; in the public life-cycle model it precedes fruiting-body development.

    Does not mean Mycelium is not a fruiting body and not a spore.

  6. volatile organic compounds (VOC)

    Compounds that evaporate and carry scent; truffle aroma is a mixture of them whose profile changes.

    Does not mean A single compound is not the whole aroma and not a standalone authenticity test.

  7. QUID (quantitative ingredient declaration)

    The regulated quantitative declaration of an ingredient, which may be required when it is named, emphasized or essential to the character of the food.

    Does not mean QUID states how much of an ingredient there is; it does not prove its origin or the truffle species.

  8. primary ingredient

    An ingredient essential to the character of the food; if a food origin is given, specific rules may apply to its origin.

    Does not mean The primary ingredient by weight is not automatically synonymous with the product’s taste or with the wording on the pack.

  9. species identity

    The answer to which species something is, established with a suitable method and reference knowledge.

    Does not mean Species identity does not answer the question of geographic origin; those are separate questions with separate evidence.

  10. geographic origin

    The question of where a fruiting body or product comes from; established by evidence other than species identity, such as reference models or quality-scheme documentation.

    Does not mean A name, an image or the word “Istria” alone does not prove origin.

    The documented path of a product through the supply chain; without it, a label alone does not prove everything about species or harvest place.

    Does not mean Chain of custody is not a laboratory test; documents and analysis answer different questions.

  12. PDO/ZOI (protected designation of origin)

    A regulated quality label applied under a written specification; its status is verified in official registers.

    Does not mean A procedure status is not a marketing synonym and not proof of the species or the exact location of an individual fruiting body.

    Data captured in the project’s own acquisition process, with source and date; marks what was directly recorded rather than merely stated.

  14. attributed

    A statement published as the claim of a named source, without independent verification by the project; the source stays visible beside the claim.

    Does not mean Attributed does not mean confirmed; it means the claim remains bound to its source.

  15. inferred

    A conclusion drawn from evidence and publicly marked as such, distinct from an established state.

    Does not mean Inferred does not mean wrong; it means the boundary of the conclusion must be read together with the claim.
