What Is a Truffle? The Tuber Fungus Explained

A truffle is a fungus: the underground fruiting body of Tuber, tied to tree roots. What that means, how species differ and why fresh truffles are scarce.

The genus Tuber contains multiple species with different traits and seasons. The underground fruiting body produces and disperses spores.

The underground fruiting body is not the whole fungus. Mycorrhiza describes the association between the fungus and a host tree’s roots. A scientific name helps distinguish species: “white” and “black” alone establish neither the species nor the place of harvest.

Is a truffle a fungus?

Yes. A truffle is the fruiting body of a Tuber fungus that lives in ectomycorrhizal association with tree roots; the fruiting body develops underground.

Why are truffles expensive?

We publish no prices, but several documented conditions limit the supply of fresh truffles: they form underground beside host trees, they are collected seasonally and usually with trained dogs, how long a fresh truffle keeps depends on species, maturity and storage, and reliable orchard cultivation of the white truffle (Tuber magnatum) is not established.
